Easy Farmers Market Pickles

With summer winding down, taking advantage of the bounty at your local farmers market and preserving it for months to come is a great option. We will include a canning post in an upcoming blog, but today we are going to make the easiest and tastiest pickles you ever had!

Canning supplies are readily available at your local supermarket this time of year, you’ll need quart sized mason Jars. Some people even recycle the glass jars from other pickled products to use for this project.

Farmer’s Market New Pickles

You’ll need:

12-16 small to medium Kirby cucumbers, washed

1 quart water

1/2 cup kosher salt

Pickling spices

Smashed garlic cloves (1-3 per jar)

Place the pickles into the jars as many as you can fit.

Mix the water, salt and pickling spices

Smash the garlic cloves, and add 1-3 per jar

Once the salt/ water mixture is combined, pour into each jar ensuring you cover the cucumber. Tightly seal the jars and place in the refrigerator. You can taste them the next day and they are good, but optimal wait time is 1-2 weeks. Enjoy!
